BAKED CARAMEL CORN 
1 3/4 sticks of butter
2 c. packed brown sugar
1/2 c. light corn syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
6 qts. popped corn

Melt butter; stir in brown sugar, corn syrup and salt. Bring to a boil, when it reaches a boiling point, let it boil 5 minutes without stirring. Remove from heat. Stir in soda and vanilla. Pour over popped corn and mix well. turn into 2 large baking or roasting pans, uncovered.

Bake in a 250 degree oven for 1 hour, stirring every 15 minutes. Remove from oven. Cool completely. Break apart and keep tightly covered or in ziplock bags. Makes 6 quarts.
