SOUR CREAM CHICKEN ENCHILADAS 
3 chicken breasts
1 can chopped chilies
1 can cream chicken soup
6 tortillas
Shredded Monterey jack cheese
1 chopped onion
1/2 c. sour cream
Shredded cheddar cheese
1 can tomatoes and green chilies

Cook chicken and cut into bite size pieces. Mix onion, tomatoes, chilies, sour cream, tomatoes and green chilies. Tear tortillas into small pieces. Layer 1/2 the tortillas in casserole. Pour 1/2 the chicken mixture over tortillas. Cover with other 1/2 tortillas and then rest chicken mixture. Cheese on top optional. Bake at 350 degrees for 40 minutes.r6
