ROASTED VEGETABLES 
6 sm. red potatoes, halved
2 sweet potatoes, peeled and cut in lg. chunks
2 onions, quartered
5 carrots, sliced thickly
1/2 lb. green beans

Arrange vegetables in a large baking dish, drizzle with good olive oil. Sprinkle with salt. Bake 45-60 minutes, covered, at 350 degrees.

Serves 6.
