SWEET CORN FRITTERS 
1 egg
1/4 c. milk
1/2 c. all purpose flour
1 c. fresh corn kernels (1 lg. cob)
Pinch salt
2 tsp. baking powder
Oil for frying

Beat eggs and milk together. Add flour and mix in well. Stir in corn and salt. Just before cooking, add baking powder. Heat 1 1/2" of oil in a frying pan. Drop batter by spoonfuls into oil and fry on both sides just until crisp and golden, about 1 minute. Drain on paper towels and serve immediately. Makes 14 fritters.
