SWEET AND SOUR PEAS WITH APPLES
& RAISINS
 
3 c. dried peas (chick peas)
8 oz. dried apples
1 c. raisins
Salt
1 tbsp. honey
1/2 tbsp. cider vinegar
1/2 tsp. vanilla sugar

1. Rinse peas and apples and soak them overnight in plenty of cold water.

2. Next day, bring them to a boil in the water in which they were soaked, add the raisins and salt to taste, cover and simmer for about 1 1/2 hours or until the peas are tender.

3. Mix the honey, cider vinegar and vanilla sugar in a heavy based pan and heat gently for 1 to 2 minutes.

4. Spoon the peas, apples and raisins carefully through the honey sauce and serve immediately with creamed potatoes and fried pork chops.
