MICROWAVE TAPIOCA PUDDING 
1/3 c. quick cooking tapioca
1/3 c. sugar
3 2/3 c. skim milk
1 lg. egg
1 tsp. vanilla

In large microwave safe bowl, with wire whisk, beat together all ingredients. Heat in microwave on high, 100%, uncovered for 13 minutes. Tapioca should be boiling. Beat until smooth. Cover and refrigerate to thicken.

Since microwave ovens vary in power, you may need to adjust your cooking time.
