GRANDMA'S BLUEBERRY BUCKLE 
2 c. fresh blueberries
1/3 c. sugar
1 c. plus 2 tbsp. sifted cake flour
1 1/2 tsp. baking powder
1 egg
1 tsp. salt
3/4 c. sugar
4 tbsp. shortening
1/2 c. milk
1/2 tsp. vanilla

Mix fruit with 1/3 cup sugar. Cover bottom of greased 8 inch square pan with berry mix. Combine dry ingredients. Stir shortening in mixing bowl and just soften. Stir in dry ingredients. Add milk; mix until all flour is dampened. Beat 2 minutes. Add egg; beat 1 minute. Pour batter over berries. Bake at 375 degrees for 40 to 45 minutes or until done. Serve with Lemon Sauce. This is a favorite family recipe of a real Pennsylvania Dutch treat!
