SIMPLE TOMATO SAUCE 
1 lb. can whole cooking tomatoes
6 oz. can tomato paste
8 oz. can tomato sauce
1/4 c. red wine
2 cloves garlic, crushed
1 onion, chopped
2 tbsp. oil
1/2 green pepper, chopped
1 1/4 tsp. oregano
1/2 tsp. basil
1 bay leaf
1/2 tsp. sugar

Saute onion, garlic and pepper in oil until limp. Add tomato paste, oregano, basil, bay leaf and sugar. Stir with wooden spoon as mixture blends. Add 1 1/2 paste cans of water. Add wine and tomato sauce.

Strain liquid from canned tomatoes into sauce. Mash tomatoes and add to sauce. Salt and pepper to taste. Simmer 1 1/2 to 2 hours. After sauce has simmered 1/2 hour, Perfect Meatballs may be added. Serves 4. Can be frozen.
