WATERMELON RIND ROLLUPS 
1 container (jar or can) pickled watermelon
1/2 lb. lean bacon
Toothpicks

Cut pickled watermelon into small bite-sized pieces. Cut bacon strips into lengths suitable to wrap watermelon pieces. Wrap melon with bacon and secure with toothpick. Broil or microwave until bacon is cooked. Serve while warm.

Since microwave ovens vary in power, you may need to adjust your cooking time.
