SHRIMP SALAD 
SALAD:

1 1/2 lg. heads lettuce
1 bell pepper, chopped
2 c. Minute Rice
2 1/2 lbs. shrimp, med. size

DRESSING:

1 c. Miracle Whip spread
1 sm. bottle French dressing
2 tbsp. lemon juice
1 med. onion
Salt and pepper to taste

Cook rice and place in refrigerator until cool. Cook shrimp in shrimp boil or Cajun seafood seasoning for approximately 5 minutes. Mix dressing ingredients.

After rice has cooled, mix all ingredients together, including dressing, in a large bowl and mix very well. Serve with crackers. Makes enough for 10-12 people.
