SUNSHINE BLUEBERRY LOAF | |
1/2 c. butter 1 c. sugar 3 eggs 3 c. flour 1/4 c. unsweetened orange juice 1 tbsp. baking powder 1 tsp. salt 1 tsp. baking soda 1 c. fresh or frozen blueberries 1/2 c. nuts or Grape Nuts 1 tsp. lemon extract Combine butter and sugar. Blend in eggs. Add combined dry ingredients alternately with orange juice mixing well after each addition. Add in berries and nuts. Pour into 2 greased loaf pans. Bake 1 1/4 hours at 350 degrees. 6 weeks. Use as desired or bake and freeze muffins. Bake in paper-lined or greased muffin tins, or spray muffin pan with Pam. Bake at 400 degrees for 15 to 20 minutes. Less 12 to 15 if mini pans are used. Makes a lot. |
