COTTAGE CHEESE SALAD 
1 env. unflavored gelatin
1/4 c. water
3/4 c. sugar
1/2 c. pineapple juice
1 c. crushed pineapple, drained
1 c. cottage cheese, sm. curd
1 c. Cool Whip
1 c. grated Cheddar cheese

Soften the gelatin in the 1/4 cup water. While gelatin is softening, dissolve the pineapple juice and sugar in saucepan (small). Cook until sugar is dissolved. Remove from heat and add the dissolved gelatin.

Cool until mixture starts to thicken. Mix with remaining ingredients. Top with a few pieces of the grated Cheddar. For best results, this salad should be made the night before serving. Store covered in refrigerator.
