BLACK WALNUT APPLE CAKE 
1 c. Wesson oil
2 c. sugar
3 c. diced apples (Granny Smith)
1 c. chopped black walnuts
4 eggs
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. vanilla
3 c. plain flour

Mix together eggs, oil, sugar, apples, and nuts in large bowl and set aside. Combine all dry ingredients and add to first mixture, being careful not to overmix. Pour into tube pan and bake at 350 degrees for 80-90 minutes.

GLAZE:

1 stick butter
1 c. brown sugar
1/4 c. milk

Mix together in saucepan and boil for 2 1/2 minutes. Pour over cake just hot from oven, then let cool completely in pan. Best if made several days ahead.
