ANGIE'S CHICKEN AND RICE DELIGHT 
1 pack of chicken quarters
1 1/2 c. rice, uncooked
2 green peppers, chopped
2 onions, chopped
2 tbsp. yellow food coloring (optional)
Dash of salt
2 dashes of ground red pepper

Cook chicken and all ingredients except rice and food coloring in about 2-3 cups of water in a covered pot on medium to low temperature until chicken is half done. Add yellow food coloring to rice and mix well; now add rice to chicken.

Place note: chicken and rice can be cooked in the oven or on top of the stove. If prepared in the oven, cook chicken at 325 degree temperature in a dish covered with aluminum foil for approximately 45 minutes or until rice is done. If chicken and rice are cooked on top of the stove, then cook on medium to low temperature for approximately 45 minutes or until rice is done.
