DIETETIC CHEERY CHERRY ROLL 
1/2 c. sifted cake flour
3/4 tsp. baking powder
1/4 tsp. salt
3 eggs
1/2 c. sugar
1 tsp. vanilla
1/4 tsp. almond extract
2 tbsp. confectioners sugar
1 jar diet cherry jelly

Grease a jelly roll pan, line with waxed paper. Cut 1/2 inch smaller than pan, grease paper. Measure flour, baking powder, and salt into sifter. Beat egg until foamy light and double in volume in a medium sized bowl. Beat in sugar, 1 tablespoon at a time until mixture is thick. Stir in vanilla and almond.

Sift flour mixture over and fold in until no streaks of white remains. Spread evenly into prepared pan. Bake at 400 degrees for 8 minutes or until center springs back when lightly pressed with fingertip.

Cut around cake with sharp knife turn onto clean towel dusted with powdered sugar. Peel off waxed paper, start at short end of cake, roll up, wrap in towel and cool completely.

Unroll cake carefully, spread evenly with jelly. Re-roll, dust top with remaining powdered sugar. Weight watchers serving 1 slice.
