UNCOOKED TOMATO SAUCE WITH
SPAGHETTI
 
2 lb. very ripe tomatoes
1/3-1/2 c. olive oil
1 med. onion, chopped
1/2 c. fresh basil, chopped
Salt & pepper
2 garlic cloves, minced
1 lb. spaghetti (fresh if possible)
Parmesan cheese, freshly grated

Drop tomatoes into boiling water for 1 minute, remove. When cool peel and chop into 1 inch pieces. Place tomatoes, olive oil, basil, onions and garlic in bowl. Mix and season to taste with salt and pepper. Let sit for at least 1 hour at room temperature. Cook spaghetti, al dente, drain place in large warm bowl.

Pour tomato mixture over spaghetti, mix and serve immediately. Pass Parmesan cheese. Great with steamed fish or chicken.
