PUMPKIN BUTTER | |
3 1/2 c. cooked pumpkin (one 29 oz. can) 1 tbsp. pumpkin pie spice 1 box (1 3/4 oz.) powdered fruit pectin 4 1/2 c. sugar Mix first 3 ingredients, place on high heat and stir until comes to a hard boil. Add sugar all at once, stir constantly, bring to hard rolling boil and boil 1 minute. Remove from heat put into jars boiling hot with in 1/2 inch of top. Put lids on, process 5 minutes in boiling water bath canner. Makes 5 1/2 cups, 7 (6 oz.) glasses. |
