RICOTTA PANCAKES 
1 tub (15 oz.) Ricotta cheese (or low-fat Ricotta)
1/2 c. flour
1/4 c. sugar
1 tsp. vanilla
1 egg
Additional flour
2 tbsp. butter

Combine cheese, egg, sugar, vanilla and flour. It will be soft and sloppy, but take about half a cup of batter, form a patty, dredge in additional flour on both sides and fry in electric skillet at 350. Serve with honey and grated lemon peel.
