TEXAS CAVIAR 
2 medium tomatoes, chopped
1 bunch green onions, chopped
2 minced garlic cloves
1 can white hominy, rinsed and drained
1/2 c. chopped fresh cilantro
1/2 tsp. salt
1 medium bell pepper, chopped
1 can black-eyed peas, rinsed and drained
1 (8 oz.) jar picante sauce
3 tbsp. lime juice

Stir together. Cover and chill, stirring occasionally, for 8 hours.
