MIXED VEGETABLE CASSEROLE 
8 oz. Velveeta cheese
30 Ritz crackers
1 pkg. frozen mixed veg-broccoli, carrot, cauliflower
1 1/4 stick butter

Crumble crackers in bowl. Add 1/2 stick melted butter. Stir well until all crackers are moist. Set aside. Melt 3/4 stick butter on stove. Add Velveeta cheese until thoroughly melted. In a casserole dish, put frozen vegetables, pour cheese over top until all vegetables are covered. Sprinkle cracker crumbs on top of cheese. Bake at 325 degrees for 30 minutes.
