SOFT PRETZELS | |
1 pkg. yeast 1/2 c. warm water 1 c. milk, scalded & cooled 2 tbsp. sugar 1 1/2 tsp. salt 3 1/4 - 4 c. flour 2 qts. water with 1 tbsp. baking soda 1 egg, beaten 1 tbsp. water Coarse salt Dissolve yeast in water, let stand 10 minutes. Stir in milk, salt, sugar, 2 cups flour. Beat until smooth, add enough remaining flour to make dough easy to handle. Knead dough until smooth, 10 minutes. Place in greased bowl, flip dough, cover and let rise until double (1 hour). Roll dough into 18"x10" rectangle. Cut into 10 strips. Roll each strip and form pretzels. Let rise for 30 minutes. Heat water to boiling, add soda. Dip pretzels in water until firm and sticky. Place on greased cookie sheet repeat for all. Brush pretzels with egg mix and sprinkle with coarse salt then bake at 400 degrees for 18 to 20 minutes. Cool on a wire rack. Serve warm. |
