SAVORY PECAN ROAST 
1 c. corn flake crumbs or bread crumbs
2 c. chopped pecans
2/3 c. cooked rice
1 med. onion, minced
1 1/2 c. milk
3 eggs, beaten
1 tsp. sage
3 tbsp. olive oil
2 tbsp. chopped parsley
2 tbsp. soy sauce
1/2 tsp. salt
Pinch of thyme
Pinch of sweet basil

Combine all ingredients, mixing well. Pour into a well-greased loaf pan and bake for 1 hour in 350 degree oven. Turn onto a platter and garnish with parsley. Serve with mushroom sauce or other favorite gravy. Serves 8.

NOTE: This recipe is a vegetarian substitute for meatloaf.
