SPINACH MADELEINE 
2 pkgs. frozen chopped spinach
4 tbsp. butter
2 tbsp. flour
1/2 c. chopped white onion
1/2 c. evaporated milk
1/2 c. vegetable liquor
1 tsp. celery salt
1 tsp. garlic salt
1 tsp. black pepper
1 (6 oz.) roll jalapeno cheese
1 tsp. Worcestershire sauce

Cook spinach according to package directions. Drain well and save liquor. Melt butter in skillet. Add flour, stirring until smooth over low heat. Add onion and cook until soft, not brown. Add liquids slowly, stirring to avoid lumps. Add seasonings and cheese which has been cut into pieces. Stir until melted. Mix with spinach. Place in greased casserole dish, top with bread crumbs or Parmesan cheese. Refrigerate overnight. Bake at 350 degrees for 30 minutes or until hot. Serves 6.
