SPINACH CASSEROLE 
3 boxes frozen spinach
1 pt. sour cream
2 tbsp. butter
1 pkg. dry onion soup mix
1 c. grated sharp cheddar cheese (opt.)
Buttered croutons or herb bread stuffing or crumbled Ritz crackers

Cook spinach as directed and then drain. Mix in sour cream, soup mix, butter and cheese. Bake in a greased casserole dish. Top with either croutons, herb stuffing or Ritz crackers. Bake 20 minutes at 400 degrees.
