2 c. chopped cherry tomatoes 1/2 c. cilantro sprigs 1/4 c. finely chopped onion 1/4 tsp. salt 4 English muffins, split and toasted 1/4 c. mayonnaise 8 slices bacon, cooked crisp and halved 1 c. shredded Pepper Jack cheese In medium bowl combine tomatoes, cilantro, onion and salt. Spread muffins with mayonnaise and arrange on cookie sheet. Top with tomato mixture, bacon and cheese. Place in preheated broiler and broil until cheese melts. |
