HOT PICKLED OKRA 
Small whole okra pods
Garlic
Serrano pepper
Salt
Vinegar

Wash and trim okra leaving stems, pack into hot jars. To each pint add 1 clove garlic, 1/2 teaspoon salt and 1 pod of pepper. Bring vinegar to a boil over full gas flame. Cover okra with boiling hot vinegar, leaving 1/4" headspace. Close jars and process in boiling water bath 20 minutes. Start to count processing time as soon as jars are placed in actively boiling water. Let stand several weeks. Chill several days before serving.
