YUMMY YAM BAKE 
3 lg. yams
2/3 c. brown sugar, packed
1 tbsp. lemon juice
1/4 c. butter
1/2 c. walnut halves
1/2 c. pineapple chunks

Wash yams. Cook unpeeled in small amount of water, covered, for 20-30 minutes. Cool. Peel and cut lengthwise into 1/2 inch slices. Put in greased casserole dish. Sprinkle with lemon juice and brown sugar. Top with pineapple, walnuts, and dot with butter. Bake at 350 degrees for 25 minutes. Serves 4-6.
