PASTIES
4 1/2 c. sifted flour
2 1/2 tsp. baking powder
2 1/2 tsp. salt

Cut 1 cup butter into dry ingredients. Add 3 eggs (beaten with fork and combine with 3/4 cup milk). Mix until dough is soft, but not too sticky. Knead gently until smooth. Wrap in wax paper and chill while preparing filling.

FILLING:

Peel and dice, slice or coarsely grind:

5 c. potatoes
3 1/2 c. carrots
1 c. onion
1 med. rutabaga (optional)

Mix well in large mixing bowl. Sprinkle with about 4 teaspoons salt (or to taste) and pepper. Crumble 1 pound (more or less) hamburger on top of mixture and salt meat to taste. Blend well into mixture. Add any other desired vegetables and 1/4 cup vegetable stock (i.e., one can green beans with approximately half the liquid).

PREPARATION OF PASTIE:

Divide dough into 6 or 8 equal parts to fit desired pans. Roll out each part into a square. Place 1/6 or 1/8 filling on each (or place enough filling on dough to leave 2 inches of dough sticking out on all 4 sides). Dot with butter (1 slab). Bring up sides and press into shape. Make small gash at top. Brush with milk and bake in greased pan at 350 degrees for approximately 1 hour and 15 minutes.
