LINGUINI WITH RICOTTA PESTO 
1 (16 oz.) pkg. linguini
4 c. loosely packed fresh basil leaves
2 sprigs fresh parsley
1/4 c. pine nuts or walnuts
1 garlic clove
1 (15 oz.) container Ricotta cheese, divided
1/2 c. grated Parmesan cheese

Cook pasta following package directions; drain. In food processor or blender, combine basil, parsley, pine nuts, garlic, 1 cup Ricotta and Parmesan; process until smooth and creamy.

To serve, in large bowl, toss hot pasta with Ricotta mixture. If desired, top with spoonfuls of remaining Ricotta. Makes 4 servings. Preparation time: 10 minutes. Cooking time: 10 minutes.
