ROAST LOIN OF PORK 
4 to 5 lbs. pork loin
1 1/2 tbsp. flour
1 tsp. salt
1/2 tsp. sugar
1 tsp. ground mustard
1/2 tsp. sage
1/4 tsp. black pepper

Mix all dry ingredients and rub into the loin. Roast at 325 degrees, uncovered, 4 to 5 hours.

CRUSTY TOPPING:

1 1/2 c. applesauce
1/2 c. brown sugar
1/4 tsp. cinnamon
1/4 tsp. ground cloves

After meat has baked 1 1/2 hours, spread with topping and continue roasting until tender.
