RICHARD'S VEGETABLE BAKE 
1 c. sm. curd cottage cheese
2 eggs, slightly beaten
1/4 c. grated Parmesan
1 tbsp. chopped parsley
1 tsp. garlic salt
1/4 tsp. pepper
1 pkg. (10 oz.) frozen broccoli spears
2 med. tomatoes, sliced
1 c. shredded Cheddar cheese
1 med. zucchini, sliced
Paprika

In a small bowl, combine cottage cheese, eggs, Parmesan, parsley, salt and pepper. In a 9 inch square baking dish, place thawed broccoli. Top with tomato slices, then with zucchini slices. Pour cheese mixture over vegetables.

Cover with plastic wrap. Microwave at medium power for 11 minutes. Rotate dish once halfway through baking. Can be doubled. Use a 9x13 inch pan. Microwave for 20 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
