CHICKEN CASSEROLE 
6 (1/2 oz.) slices Canadian bacon
6 (3 oz.) boned & skinned chicken breast halves
1 1/2 oz. jar dried beef
1 tbsp. corn oil butter
3/4 c. defatted chicken broth
1/2 c. nonfat milk
1/4 tsp. salt
1/2 c. light sour cream
Dash garlic powder
Dash ground pepper
1/4 c. chopped mushrooms
Paprika

Spray oven proof casserole with non-stick vegetable spray and cover bottom with dried beef. Wrap one piece slice bacon around each chicken breast half. In a skillet over medium heat, melt butter. Add flour and stir 1 minute. (Do not brown.) Add chicken stock and milk, stir until mixture comes to a boil. Add seasonings and mushrooms and continue to cook 1 minute more. Remove from heat and stir in sour cream. Pour mixture over chicken and sprinkle with paprika. Bake 1 1/2 to 2 hours at 350 degrees. Makes 6 servings.
