CHICKEN FRIED RICE 
2 c. cooked rice
2 pieces chicken
3 green onions, chopped
2 eggs
3 tbsp. soy sauce
1 sm. onion, chopped
1 tbsp. cooking oil

Boil chicken and debone; chop into small pieces. Put oil in wok or large skillet on high heat. Put in eggs and scramble. Add chicken, rice and small chopped onion and stir constantly for 4 minutes. Add soy sauce and green onions. Reduce to medium heat and stir constantly for 3 minutes.

Optional: Use beef or pork instead of chicken, if desired.
