SPINACH BARS 
4 tbsp. butter
1 c. flour
1 tsp. baking powder
1 small onion, chopped
6 strips crisp bacon, crumbled
1 lb. shredded Cheddar cheese
1 c. fried onion rings, crushed
3 eggs, lightly beaten
1 c. milk
1 (10 oz.) pkg. chopped spinach, thawed
1/2 c. chopped mushrooms

Drain spinach. In large bowl, mix together the eggs, flour, milk and baking powder until smooth. Stir in spinach, onion, bacon, cheese and mushrooms. Melt butter into a baking dish. Pour mixture into dish. Sprinkle with crushed fried onion rings.

Bake at 350°F for 30 to 35 minutes or until golden brown. Cool slightly and cut into small squares.

Makes about 40 bars. Reheats well.
