CRISPY REUBEN SANDWICHES 
2 eggs, beaten with 1 tbsp. milk
8 slices rye bread
1 1/4 c. corn chips, finely crushed
1/4 c. Thousand Island dressing
4 thin slices corned beef
4 slices Swiss cheese
1/2 c. sauerkraut, rinsed and drained

Dip one side of bread in egg mixture, then in crushed corn chips. Place chip side down on baking sheet. Spread with dressing. Top with corned beef, cheese and 2 tablespoons sauerkraut. Dip remaining slice of bread on one side in egg mixture then into chips and place chip side up making a sandwich. Bake at 350 degrees in preheated oven for 15 to 20 minutes or until cheese melts. Makes 4 sandwiches.
