POPPY SEED COOKIES 
1 1/4 c. rolled oats
3/4 c. unbleached white flour
1/2 c. whole wheat flour
1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. poppy seeds
1/2 c. sweetener (maple syrup, honey, rice syrup)
1/2 c. oil
1 tsp. vanilla

Grind oats into flour. Combine with other dry ingredients. Whip sweetener, oil and vanilla together. Mix all ingredients together. Preheat oven to 375 degrees. Chill dough 10 minutes. Drop dough by tablespoonfuls onto oiled cookie sheets and flatten. Bake 10-12 minutes.
