CHICKEN CARUSO AND RICE 
2 whole boneless chicken breasts, cut in thin strips
Garlic
Salt & pepper
3 tbsp. butter
1 (15 1/2 oz.) jar spaghetti sauce
1 tsp. Italian seasoning
2 c. celery, sliced
3 c. hot cooked rice

Season chicken with garlic salt and pepper. Saute for about 2 minutes in butter. Stir in sauce and Italian seasoning. Cover and simmer for 10 minutes. Add celery and cook until tender-crisp. Serve over rice; sprinkle with Parmesan cheese if desired.
