RHUBARB JELLO SURPRISE 
1 lg. pkg. strawberry Jello
2 c. boiling water, approximately
1 sm. can crushed pineapple
1 c. rhubarb, diced
1 c. fresh strawberries (optional)
Whipped cream

Cook rhubarb and pineapple together until rhubarb is done. Add enough boiling water to makes 2 cups of mixture. Add to Jello and stir to dissolve. Cool and add strawberries if desired. Chill. Serve with whipped cream.
