MINESTRONE SOUP | |
1 lb. Italian sweet sausage 1 tbsp. olive oil 1 c. diced onion 1 clove garlic, minced 1 c. sliced carrots 1 tbsp. crushed basil 2 (1 lb.) cans pear tomatoes, chopped & undrained 2 sm. zucchini, sliced 2 (10 3/4 oz.) beef bouillon 1 1/2 c. water 2 c. shredded cabbage 1 tsp. salt, optional 1/4 tsp. pepper 1 (1 lb.) can Great Northern beans, undrained Slice sausage 1/2 inch slices, brown in olive oil in soup pot. Add onions, garlic, carrots and basil, cook for 5 minutes. Add remaining ingredients, except beans, bring to boil. Reduce heat and simmer for 1 hour. Add beans with liquid, cook 20 minutes more. |
