FINNISH PANCAKES 
2 eggs
2 c. milk
1 tsp. salt
Dash of nutmeg
2 tbsp. sugar
1 c. cake flour
1/2 c. all purpose flour

Beat eggs slightly, toss in lightly the milk, salt, sugar and nutmeg. Sift and add very lightly a little flour at a time stirring gently. Keep mixture thin. Brown quickly on both sides in a hot skillet.
