HOPPING JOHN 
4 strips bacon
2 c. boiling water
1/2 c. raw rice
2 c. black-eyed peas
1/4 c. chopped onions
Salt and pepper to taste

Dice bacon, fry with onions. Add peas, rice and water. Cover and cook on low heat. Add seasonings. Test for doneness after 30 minutes.
