MICROWAVE CHOCOLATE PEANUT
BUTTER PUDDING
 
1 c. flour
3/4 c. sugar
2 tbsp. cocoa
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1/2 c. peanut butter
2 tbsp. oil
1 tsp. vanilla
1 c. brown sugar
1/4 c. cocoa
1 3/4 c. hot water

Mix flour, sugar, 2 tablespoons cocoa, baking powder, and salt in 2 quart casserole. Stir in milk, peanut butter, oil, and vanilla until smooth. Sprinkle with brown sugar and 1/4 cup cocoa. Pour hot water over batter.

Microwave, uncovered, 9 minutes on medium. Rotate casserole 1/4 turn. Microwave on high 5-7 minutes until top is almost dry. Serve warm with Cool Whip.

Since microwave ovens vary in power, you may need to adjust your cooking time.
