SPECIAL SUGAR COOKIES 
2 c. flour
1 tsp. cream of tartar
1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. sugar
1/2 c. corn oil
2 eggs
1 tsp. vanilla

Sift together flour, cream of tartar, baking powder, and salt into large bowl. Mix sugar and oil in separate bowl. In small bowl, beat eggs slightly. Add vanilla and add this mixture to sugar. At this point, you may want to add food coloring for certain holidays (1/2 teaspoon). Gradually add this mixture to the flour mixture. The batter will be stiff but must be completely mixed. Chill batter for 1 hour until easy to handle. Roll dough on floured surface with rolling pin to 1/8 inch thickness. Cut cookies and bake at 375 degrees for about 10 minutes. Do not overbake. Cookies become crisp as they cool and should not be crisp until then. Keep dough cool between baking. Remove cookies from sheet with spatula. Cool on rack or waxed paper. Enjoy. They are worth the work.
