CHEESY ITALIAN BREAD 
2 tbsp. (30 ml) olive oil
3 garlic cloves, smashed & chopped
6 med. tomatoes, peeled & diced
1 tbsp. (15 ml) oregano
8 lg. slices lightly toasted Italian bread
1 1/2 c. (375 ml) grated Mozzarella cheese
Salt & freshly ground pepper

Preheat oven to 375 degrees. Heat oil in frying pan over medium heat. When hot, add garlic, tomatoes and oregano; season well and cook 10 minutes. Arrange bread on cookie sheet and top with tomato mixture. Cover with cheese. Change oven setting to boil and cook Italian bread until cheese is melted and bubbly. Season pieces with freshly ground pepper, slice in half and serve. Serves 6 to 8.
