MEAT AND POTATOES SCALLOP 
2 c. chopped cooked meat (ham, roast beef or pork)
2 c. chopped cooked potatoes
1 med. onion, chopped
2 tbsp. butter
Salt and pepper
1 can condensed cream soup (celery, mushroom, or chicken)

Cook onion in butter until tender. Layer in casserole 1 cup potatoes, 1 cup meat, onion, 1 cup meat, 1 cup potatoes. Blend 1/2 cup water with soup, pour over potatoes; top with crushed cracker crumbs, if desired. Bake at 350 degrees for 30 minutes.
