BEEF 'N CHEDDAR SAUTE 
Makes 4 servings.

1 tbsp. plus 1 tsp. vegetable oil
1 c. chopped onions
1 med. red or green bell pepper, seeded and chopped
1 garlic clove, minced
1 c. sliced mushrooms
12 oz. cooked ground beef, crumbled
1/2 c. tomato sauce
2 c. cooked sm. macaroni shells
4 oz. Cheddar cheese, shredded
1/4 c. evaporated skimmed milk
2 tsp. Worcestershire sauce
Dash each salt and pepper

In 12 inch skillet heat oil over medium heat; add onions, bell pepper, and garlic and saute, stirring occasionally, for about 5 minutes. Add mushrooms and continue sauteing just until mushrooms begin to soften. Add beef and stir to break up any large pieces; add tomato sauce and bring to a boil. Reduce heat and let simmer to blend flavors, about 5 minutes. Add remaining ingredients and stir to combine; cook until heated through.

Each serving provides: 4 Protein Exchanges; 1 Bread Exchange; 2 Vegetable Exchanges; 1 Fat Exchange; 10 Calories Optional Exchange.
