CHICKEN CACCIATORE | |
2 boneless chicken breasts, cut up 1-2 tbsp. oil 15 oz. can tomato sauce 6 oz. can tomato paste 1 c. water 3/4 dry red wine; optional 1 tsp. basil 1/4 tsp. garlic 1 tsp. oregano 1 tbsp. parsley 3/4 tsp. salt 3/4 tsp. sugar 1/8 tsp. pepper 1 sm. onion, chopped 1 green pepper, chopped 1 c. fresh mushrooms, chopped Saute chicken and onion in oil. Add remaining ingredients. Simmer over low heat, covered, 45-60 minutes. Add 1 tablespoon flour if needed to thicken. Serve over hot cooked rice. |
