LIGHT 'N FRUITY PIE 
1 pkg. (3 oz.) Jello gelatin, any flavor
2/3 c. boiling water
2 c. ice cubes
1 container (8 oz.) Cool Whip, thawed
Fruit (optional)
1 packaged graham cracker crust

SUGGESTED FRUITS:

1 c. whole raspberries, blueberries, diced orange sections, strawberries, or banana
1 can (8 3/4 oz.) apricots, sliced peaches, fruit cocktail, drained and diced
1 can (8 1/4 oz.) crushed pineapple, drained

Dissolve gelatin completely in boiling water, stirring about 3 minutes. Add ice cubes and stir until gelatin is thickened, about 2 to 3 minutes. Remove any unmelted ice.

Using wire whisk; blend in Cool Whip non-dairy whipped topping; then whip until smooth.

Fold in fruit. Chill, if necessary, until mixture will mound. Spoon into crust. Chill 3 hours. Garnish, if desired.
