DIDGES SALMON ROLL 
8 oz. or more cream cheese
1 can salmon, boned and drain off part of juice
1 tbsp. minced onion
1 tbsp. lemon juice
2 tbsp. horseradish
Little salt

Bring to room temperature. Mix well and form into a roll on waxed paper or aluminum foil, sprinkled with dried parsley and nuts. Sprinkle parsley and nuts on balance of roll. Wrap and chill. Makes an excellent spread on crackers.
