This is one of the best jello salads ever created!!! It may sound odd, but it's very complex in flavor and texture--it's not your average jello mold! It's also a great recipe to revised for a Low Carb Lifestyle.

This is the same recipe that Furr's Cafeteria served when I was growing up. Furr's molded it in square/rectangle pans, cut it, and served it on top of a leaf of lettuce. This salad also tastes great made with orange jello, but I'm partial to lime.
